Peach Cobbler Cookies with Simple Peach Glaze

Ingredients

For Cookies

  • 1 cup unsalted butter, room temperature (227 g)
  • 1/2 cup granulated sugar (100 g)
  • 1/2 cup brown sugar (100 g)
  • 1 large egg
  • 1 tsp peach flavoring
  • 2 1/2 cups all-purpose flour, scooped & leveled (340 g)
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup diced canned peaches, juice drained and reserved (150 g)
  • 1/2 tsp ground cinnamon

For Glaze

  • 1 cup powdered sugar (130 g)
  • 1/4 cup peach juice (59 ml)

Instructions

  1. In a large bowl, cream the butter, granulated sugar, and brown sugar together on medium-speed for 5-minutes until fluffy and pale yellow. 
  2. Beat in the egg and peach flavoring until just combined. 
  3. Sift into the bowl the flour, salt, baking soda, and baking powder.  Flour on top of dough in large bowl
  4. Mix to incorporate until the dough has formed. 
  5. Stir in the drained peaches and cinnamon until well distributed. Cookie dough with peach pieces showing by beater
  6. Line a baking sheet with parchment paper. 
  7. Scoop cookie dough in balls onto the lined baking sheet.
  8. Cover loosely and chill for 30-minutes. 
  9. Preheat the oven to 350°F. 
  10. Bake the cookies for 12 to 15 minutes until golden and just cooked through. Light brown cookies on parchment lined baking sheet
  11. Allow cookies to cool for 10 minutes on a wire rack.  
  12. In a small bowl, whisk together the powdered sugar and 1/4 cup peach juice to create a glaze.  Add additional juice to thin as desired. Baked cookies on baking sheet with bowl of powdered sugar on side
  13. Once cookies are mostly cooled, spoon the glaze over the cookies. 
  14. Let the glazed cookies sit for 45 to 60 minutes to set the glaze before serving. Cookies with glaze on counter next to cutting board with peach

Notes

Variation

Omit the glaze and instead roll the cookie dough balls in cinnamon sugar prior to baking.
