A simple soy chicken recipe that is fast, easy, and delicious. Perfect for serving over brown rice or with your favorite zoodles!

Ingredients

  • 4 boneless skinless chicken breasts, cut into 1" chunks
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 tbsp sriracha

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add in the diced onions and bell peppers and saute for 3 minutes, stirring regularly.
  2. Add in the garlic, and cook an additional 1 minute.
  3. Season the chicken pieces with paprika and pepper.
  4. Add the chicken to the skillet, and cook, stirring regularly for 3 minutes, until just starting to brown.
  5. Pour in the soy sauce, and continue cooking for another 4 to 5 minutes, until the chicken is browned and cooked through.
  6. Add sriracha, stir to combine, and serve with rice.

Notes

Can substitute chicken thighs if desired.
