A simple grilled chicken salad is an excellent way to add something light and healthy to your menu that is also satisfying!

Ingredients
For Chicken
4 boneless skinless chicken breasts
1/4 cup honey
1/8 cup soy sauce
1/2 cup apple juice
1 tablespoon brown sugar
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1/4 teaspoon paprika
For Salad
8 cups mixed greens
1 red bell pepper, chopped
1 seedless cucumber, chopped
1 pint cherry tomatoes
1/2 red onion, sliced thin
1/2 cup shredded cheddar cheese
1/2 cup prepared honey mustard salad dressing
Instructions
In a large bowl, whisk together the honey, soy sauce, apple juice, brown sugar, garlic powder, onion powder, paprika, and black pepper. Place the chicken into the marinade and cover well, then rest for 30-minutes.
Over direct flame, grill the chicken breasts for 4 to 5 minutes per side until 160°F internally. Remove from the grill and cover to rest for 5 minutes before slicing.
Serve chicken over desired salad greens and toppings with 2 tablespoons honey mustard over the top.
