Ingredients
2 tablespoons olive oil
1 onion, chopped
1 bell pepper, chopped
4 cloves garlic, minced
1 pound ground beef
15-ounce can chili beans, rinsed and drained
15-ounce can kidney beans, rinsed and drained
28 ounce can diced tomatoes, with juice
8 ounce can tomato sauce
4 cups beef broth
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
Instructions
In a 6-quart Dutch oven, heat the oil over medium heat. Add in the onions and bell pepper and cook for 3 minutes, stirring regularly.
Add in the garlic and cook for an additional 1 minute.
Add the ground beef, and cook for 5 minutes, breaking up the meat with the spatula. The meat will not be cooked through.
Stir in the beans.
Add in the tomatoes, tomato sauce, beef broth, and all seasonings. Stir to combine then bring to a boil. Once boiling, reduce to a simmer and continue cooking for 20 minutes.
Serve hot with cheese, green onions, and sour cream.
