Vegan Chili Soup + 30 Comforting Soup Recipes

A deliciously rich and protein-packed vegan chili is a great comforting dish loaded with beans, vegetables, and that classic chili spice flavor you love!

Ingredients

  • 1 tbsp olive oil
  • 1 red onion, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 large tomatoes, chopped
  • 1 (15 oz.) can dark kidney beans, rinsed and drained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can great northern beans, rinsed and drained
  • 1 (28 oz) can diced tomatoes, with juice
  • 2 tablespoons tomato paste
  • 4 cups vegetable broth
  • 3 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper

Instructions

  1. In a 5-quart Dutch oven, heat olive oil over medium heat. Add in onions, bell peppers, and garlic. Cook for 4 to 5 minutes, until vegetables are just tender.
  2. Add all remaining ingredients to the Dutch oven and stir to combine. Bring to a boil, then reduce to low and simmer for 20 minutes, stirring occasionally.
  3. Serve with your favorite vegan toppings.

Notes

You can "beef" this up with 1 package Gardein meat crumbles added in the last 10 minutes of the cook time.
