Chicken Noodle Soup + 30 More Soups & Chilis

Make a batch of this classic chicken noodle soup in less than 30-minutes for the perfect comforting meal!

Ingredients

  • 1 tablespoon olive oil
  • 1/2 yellow onion, chopped
  • 2 carrots, peeled and diced
  • 3 ribs celery, diced
  • 2 cloves garlic, minced
  • 2 cups cooked chicken thighs, shredded or cubed
  • 8 cups chicken broth
  • 1 teaspoon season salt
  • 1 teaspoon black pepper
  • 1/2 cup fresh chopped parsley

Instructions

  1. In a 5-quart Dutch oven, heat the olive oil over medium heat. Add in the onions and cook for 3 minutes.
  2. Add in carrots, celery, garlic, chicken, broth, salt, and black pepper. Bring to a boil, then reduce to low and simmer for 15 minutes.
  3. Add chopped parsley and continue cooking for an additional 5 minutes.
  4. Serve hot with crackers.

Notes

Substitute chicken breasts for thighs if preferred.
