Ingredients
1 pound spaghetti
2 tablespoons olive oil
1 green bell pepper, diced
1 yellow onion, diced
1 pound boneless skinless chicken breasts, cut into 1/2" pieces
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1 (15 oz) can Rotel tomatoes, with juice
1 (15 oz) can cream of chicken soup
1 cup shredded cheddar cheese
1 cup shredded pepper jack cheese
Instructions
Prepare spaghetti according to package directions. Drain, reserving 1/2 cup pasta water, and set aside.
In a large skillet, heat olive oil over medium heat. Add the peppers and onions. Cook, stirring regularly, for 4 to 5 minutes until tender and beginning to brown. Remove from the pan.
Toss chicken pieces in salt, pepper, garlic powder, and cumin then place into the same skillet. Cook for 5 to 8 minutes, stirring regularly, until the chicken is cooked through.
Add the bell pepper, onion, Rotel in juice, and cream of chicken soup into the skillet with the chicken, and stir to combine.
Reduce the heat to low and add in the shredded cheeses stirring until melted. If the sauce is too thick, add in the reserved pasta water until desired consistency.
