Creamy Beef Taco Soup Recipe

My easy and creamy beef taco soup recipe is a perfect way to warm up dinnertime with tons of flavor. Make this in no time and keep everyone at the dinner table happy!

Ingredients

  • 2 pounds (1 kg) ground beef
  • 4 tablespoons vegetable oil
  • 10 oz canned diced tomatoes
  • 2 tablespoons pickled jalapenos, chopped
  • 4 cups beef broth
  • 1 teaspoon garlic powder
  • 1/2 tablespoon ground cumin
  • 1 onion powder
  • 1/2 teaspoon paprika
  • 1 cup canned corn
  • 1 cup canned kidney beans or pinto beans
  • 6 oz (180g) cream cheese, room temperature
  • Optional: shredded cheese, avocado, tortilla chips, hot sauce, or cilantro

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add beef and cook it until browned (around 10 minutes).
  2. Add in spices, canned beans, corn, and jalapeno. Cook for 5 minutes more.
  3. Mix in the tomatoes and broth and stir to combine.
  4. Bring the taco soup up to a boil, then allow to cook for 3-4 more minutes or until the tomatoes begin to fall apart.
  5. Remove from the heat and mix in the cream cheese until mixed.
  6. Serve with toppings as desired.

Notes

Feel free to use shredded chicken, ground turkey, or ground chicken instead for more variety.
