Mini English Muffin Breakfast Pizzas

A fast and easy English muffin breakfast pizza is the perfect combination of classic flavors that is ready in 10 minutes or less for a grab and go meal to start your day!

Ingredients

  • 1 large egg, beaten
  • 1 tsp unsalted butter
  • 2 tbsp marinara sauce
  • 1 English muffin
  • 2 tbsp shredded Italian cheese
  • 2 slices pepperoni

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper then set it aside.
  2. In a small skillet, melt the butter over medium heat then swirl around the pan to coat.
  3. Beat the egg well and season with salt and black pepper.
  4. Pour the egg into the skillet and cook, stirring often, until it is set into soft curds. It doesn't need to be fully cooked as it will finish in the oven. scrambled eggs in pan
  5. Spread marinara sauce onto each side of the English muffin.

  7. Place into the oven for 3 to 5 minutes until the cheese is melted and the egg is cooked through.
  8. Serve immediately.

Air Fryer Directions

  1. Preheat the air fryer to 400°F.
  2. Prepare the English muffin as directed in steps 2 to 6 above.
