Ingredients
For Chicken Breasts
2 boneless skinless chicken breasts
1/2 teaspoon garlic salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
1/8 teaspoon cayenne pepper
For Honey Mustard Dressing
3 cloves garlic, minced
1 tablspoon Dijon mustard
6 tablespoons lemon juice
2 tablespoons olive oil
1/4 teaspoon black pepper
1/4 teaspoon salt
1 teaspoon honey
For Assembling Salad
4 cups lettuce or mixed greens, chopped
1 cup strawberries, chopped
2 peaches, peeled and chopped
1/2 cup onion, chopped
1/2 cup slivered almonds
1/3 cup goat cheese
Instructions
Preheat the oven to 400°F/300°C and line a baking sheet with parchment paper.
Pat the chicken breasts dry and season both sides with garlic salt, black pepper, paprika, and cayenne.
Bake for 18 to 20 minutes, or until the internal temperature reaches at least 160°F.
Remove the chicken from the oven, lightly cover, and set aside until ready to serve.
In a medium bowl, whisk together the garlic, lemon juice, Dijon mustard, olive oil, salt, black pepper, and honey until combined. Then, set aside.
Prepare the vegetables and fruit by rinsing and patting dry then chop into bite-sized pieces.
In a large bowl, toss the lettuce, strawberries, peaches, onions, and almonds together then divide onto two plates.
Slice the chicken breasts into bite-sized pieces and place them on top of the salad.
Top with goat cheese, then drizzle the top with the honey mustard sauce just before serving.
