Honey Mustard Chicken Salad with Almonds

A delicious honey mustard chicken salad is the perfect lunchtime treat! Packed with flavor from strawberries, peaches, almonds, and a bit of goat cheese, it is sure to be a favorite!

Ingredients

For Chicken Breasts

  • 2 boneless skinless chicken breasts
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/8 teaspoon cayenne pepper

For Honey Mustard Dressing

  • 3 cloves garlic, minced
  • 1 tablspoon Dijon mustard
  • 6 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 teaspoon honey

For Assembling Salad

  • 4 cups lettuce or mixed greens, chopped
  • 1 cup strawberries, chopped
  • 2 peaches, peeled and chopped
  • 1/2 cup onion, chopped
  • 1/2 cup slivered almonds
  • 1/3 cup goat cheese

Instructions

  1. Preheat the oven to 400°F/300°C and line a baking sheet with parchment paper.
  2. Pat the chicken breasts dry and season both sides with garlic salt, black pepper, paprika, and cayenne. raw chicken in oval baking dish
  3. Bake for 18 to 20 minutes, or until the internal temperature reaches at least 160°F.
  4. Remove the chicken from the oven, lightly cover, and set aside until ready to serve. chicken being cut on blue cutting board
  5. In a medium bowl, whisk together the garlic, lemon juice, Dijon mustard, olive oil, salt, black pepper, and honey until combined. Then, set aside. glass jar of honey mustard with spoon
  6. Prepare the vegetables and fruit by rinsing and patting dry then chop into bite-sized pieces.
  7. In a large bowl, toss the lettuce, strawberries, peaches, onions, and almonds together then divide onto two plates. onions being added to salad
  8. Slice the chicken breasts into bite-sized pieces and place them on top of the salad.
