Easy Tomato Egg Rings with Herbs

A simple tomato egg rings recipe is packed with flavor and protein for a great breakfast that is ready in minutes!

Ingredients

  • 1 large tomato
  • 2 large eggs
  • 1 tablespoon fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon all-purpose flour

Instructions

  1. Slice a large tomato into 1/2" thick rings.hand slicing a tomato sitting on a white cutting board
  2. Use a knife or a glass to cut the inside out of the tomato rings.
  3. Set the rings aside, then dice the tomato that you cut out of the center, into small pieces.
  4. In a small bowl, whisk together the eggs.

  6. In a large non-stick skillet, heat olive oil over medium heat.

  8. Let cook for one minute, then flip and continue cooking for an additional 30 seconds to 1 minute until the egg is cooked through.
