Primavera Stuffed Chicken Breast

Delicious primavera stuffed chicken is a perfect weeknight dish that is packed with flavor and keto-friendly!

Ingredients

  • 1/2 zucchini
  • 1 medium tomato
  • 1/2 red onion
  • 1/2 bell pepper
  • 6 ounces mozzarella (170 g), divided
  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1 1/2 tablespoon olive oil

Instructions

  1. Prepare the vegetables by slicing the tomato, onion, and bell pepper into 1/4" slices. Then, slice the zucchini in half lengthwise and slice one half into 1/4" pieces. hand picking up sliced tomatoes on blue cutting board
  2. Slice 4 ounces of mozzarella into 1/4" thick slices and set aside the remaining 2 ounces to grate over the top later.
  3. Pat the chicken breasts dry, then cut 3/4 of the way through each breast every 1/2"-1" to create "pockets". knife cutting into chicken breasts
  4. Season the chicken breasts on both sides with salt, black pepper, and if desired garlic powder and cayenne pepper.
  5. In each pocket on the chicken breasts, place vegetables and a slice of cheese. Alternate the vegetables so there is a tomato, onion, then zucchini so each bite has a little of everything.
  6. Drizzle olive oil over the bottom of a baking dish, and transfer the stuffed chicken into the dish.
  7. Bake for 30 minutes, then check to see if it has reached an internal temperature of at least 155°F to 160°F.

Notes

This can be made with chicken thighs if desired. Reduce the cooking time to 20 minutes, then check the temperature before continuing until it reaches the desired internal temperature.
