Hungarian Mushroom Soup Recipe

A satisfying cream Hungarian mushroom soup is a great meal that is ideal for the vegetarians at your dinner table!

Ingredients

  • 1 cup milk
  • 3 tablespoons flour
  • 4 tablespoons butter
  • 1 large white onion, chopped
  • 1 pound baby bella mushrooms (500 g), sliced
  • 2 cups vegetable stock
  • ½ cup white wine
  • 2 teaspoons dried dill
  • 2 teaspoons paprika
  • 2 tablespoons soy sauce
  • ¼ cup sour cream
  • 2 tablespoons lemon juice
  • 2 tablespoons parsley

Instructions

  1. In a small bowl or measuring cup, whisk together the flour and milk until combined and no lumps remain. Set aside.
  2. In a medium to a large stockpot, melt the butter over medium heat.
  3. Add the chopped onions and cook for 10-minutes, stirring regularly, until they are softened and beginning to brown. onions being poured into stockpot
  4. To the pot, add in the mushrooms and cook, stirring regularly, for an additional 5 minutes or until they are nicely softened and reduced in size.
  5. Add in the dill, paprika, soy sauce, vegetable broth, and wine. Stir well then bring to a simmer. measuring cup of stock being poured into stockpot with mushrooms
  6. Cook the mixture until the liquid reduces by half, stirring regularly, for an additional 8 to 10 minutes.
  7. Once the mixture is reduced, stir the milk and flour mixture into the soup and cook until thickened, around 10 minutes. milk slurry being poured into blue saucepan of soup
  8. Reduce the heat to low and stir in the sour cream and lemon juice.
  9. If desired, use an immersion blender to puree the mixture into a smooth soup.
  10. Once heated through, serve with a garnish of fresh chopped parsley. spoon in blue and white bowl of mushroom soup

Notes

Use an immersion blender to create a smooth soup before servving.
