Mini Eggplant Pepperoni Pizza Recipe (Keto-Friendly)

Ingredients

  • 1 large Italian eggplant
  • 1 tablespoon salt
  • 8 ounces tomato paste (226 g)
  • 2 teaspoons dried basil
  • 3 ounces parmesan cheese (80 g)
  • 3 ounces shredded mozzarella (80 g)
  • 8 slices pepperoni

Instructions

  1. Preheat the oven to 350°F/180°C and line a baking sheet with parchment paper.
  2. Cut the ends off of the eggplant then slice into 1/2" thick rounds. hand cutting eggplant on white cutting board

  4. Let them sit for 5 to 10 minutes to allow the eggplant to release the excess water.

  8. Place a slice or two of pepperoni on top of each eggplant round.
