Crispy Parmesan Garlic Roasted Baby Potatoes

This easy recipe for crispy Parmesan garlic roasted baby potatoes is going to become a family favorite potato side dish!

Ingredients

  • 1 1/2 pounds of baby potatoes, halved
  • 2 tablespoons olive oil
  • 1/2 cup finely grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 3/4 teaspoon freshly ground black pepper

For Optional Dip

  • 1/2 cup sour cream
  • 1/2 cup Greek yogurt
  • 3 green onions, diced

Instructions

  1. Preheat the oven to 400°F/200°C and spread the olive oil over the bottom of a 9"x13" baking dish evenly. Set this aside.
  2. Wash and pat dry the potatoes, then slice them into halves and set them aside.
  3. In a small bowl, whisk together the Parmesan cheese, garlic powder, paprika, dried oregano, salt, and black pepper until combined well. white bowl of herbs with fork in center
  4. Pour the cheese and herb mixture into the prepared baking dish, coating the bottom of the dish completely.
  5. Place the potatoes, cut side down, into the pan pushing them down on top of the cheese and herb mixture. hand putting potato halves into pan of herbs and cheese
  6. Bake for 30 to 35 minutes until the cheese is browned on the bottom and the potatoes are fork tender. potato halves on top of roasted cheese

Notes

You may use shelf-stable parmesan cheese if desired, but fresh is best for this recipe.
