Ingredients
2 peaches, sliced in half and pit removed
1/4 cup dried cranberries
1/8 cup slivered almonds
1 tbsp Graham cracker crumbs
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 (11oz) can of peach nectar
1/8 cup brown sugar
1/2 cup vanilla ice cream
Instructions
Preheat your oven to 350 degrees Fahrenheit.
Cut the peach in half and use a spoon to remove the pit. Be careful not to use a knife!
Scoop out the peach pulp to create a 2-inch circle in the center of each half. Finely chop the pulp.
In a bowl, combine the peach pulp, dried fruit, almonds, 2 tablespoons of peach juice, spices, and Graham cracker crumbs. Mix well.
Evenly divide the mixture among the peaches and place them in a baking dish.
Pour nectar or peach juice/syrup into the dish.
Cover the baking dish and bake for 35 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the peaches are tender.
Drizzle the peaches with the syrup from the dish and serve with yogurt or ice cream.
Notes
If needed, you may use canned or frozen peach halves. When using canned peaches, reduce the cooking time by 1/2.
Drizzle the tops with caramel syrup instead of brown sugar for a richer taste.
Mix in 1/4 cup of coconut flakes with the crumble before stuffing the peaches.
Use the syrup from canned peaches if you cannot locate peach nectar in your grocery store.
