The BEST French Onion Soup You'll Ever Eat

Make this cream based take on a classic French onion soup as a new delicious and healthy vegetable soup for dinner!

Ingredients

  • 2 tbsp olive oil
  • 3 tbsp butter
  • 2 tbsp white wine vinegar
  • 1 tsp nutmeg
  • 2 tbsp herbs du province
  • 10 oz. leeks, chopped
  • 2 white onions, chopped
  • 3 potatoes, cut into cubes
  • 2 carrots, cut into small cubes
  • 1 ½ cup green beans
  • 7 oz frozen spinach, thawed, drained
  • 1 cup cooked rice
  • 4 cups of water
  • 1 cup cream

Instructions

  1. Melt the butter with olive oil over medium heat in the pan you will be cooking the soup in;
  2. Add chopped onions and carrots and sauté for a couple of minutes, then add chopped leek and cook until it becomes slightly soft;
  3. Season with salt, pepper, nutmeg, and add dried herbs and vinegar;
  4. Cook for a minute more, then add potatoes and pour in 4 cups of water;
  5. When the soup has gotten to the boiling point, lower the heat and cook until potatoes are soft;
  6. Add green beans, rice and spinach, then pour in the cream and remove from the heat;
  7. Taste for seasoning and adjust the amount of salt and pepper if needed.White bowl filled with creamy French onion soup
