How to Make Spring Grass Easter Cupcakes
Prepare or purchase desired cupcakes, and allow to cool.
In a medium bowl, mix ¾ of the prepared icing with green food gel to create the color you prefer.
Scoop the green icing into a piping bag prepared with a grass piping tip.
Scoop the remaining white icing into a separate piping bag with a plain round tip.
Hold the piping bag with green icing above the cupcake, straight up and down, then lightly touch the surface of the cupcake with the piping tip.
Lift up the tip squeezing the bag quickly and firmly. Stop squeezing and pull the piping bag straight up. This should create separate icing strands that look like icing.
Continue this process all around the cupcake until the entire top is covered.
If adding just sprinkles, do so immediately so the wet icing will help them stick in place.
How to Make Easter Bunny Butt Cupcakes
Cover the cupcakes as directed above. Then cut a donut hole in half. This will create two bunny bottoms.
Place the holes, cut side down on the center of the cupcakes on top of the icing. Use one half donut hole per cupcake.
Cut a miniature marshmallow in half, and stick one half on each side of the donut hole to create bunny feet.
Using the white icing, pipe a small dollop onto the end of the donut hole to create the tail.
Sprinkle or place coconut shreds on top of the icing to add "fur" on the tail.
Use edible food markers to draw pink toes on the feet if desired.
If the marshmallows or donut hole does not stick, add a little extra white icing onto them.
