1 cookie crust 30 gm gelatin 2/3 cup water 4 cups strawberries 32 oz cream cheese 1.5 cups sugar 1/2 cup heavy whipping cream 1 tsp vanilla PLUS: Whipped cream
Combine 2 cups graham crackers, 2 tbsp sugar, 1 tsp cinnamon, and 1 stick melted butter and press into bottom of springform pan then chill.
Combine gelatin and water then heat to dissolve and set aside to bloom.
Add 2 cups of berries to a blender or food processor and pulse until smooth then set aside.
Combine cream cheese and sugar until smooth. Make whipped cream and fold into cream cheese. Add pureed strawberries, then fold in diced berries.
Pour cheesecake filling over prepared crust and refrigerate for 4-6 hours before serving.
