Everyone loves cheese. Then, of course, you go do something like coat it in breadcrumbs and deep fry it, and you have a snack or appetizer that is loved by all.
This recipe for Cheese Boulders is a unique combination of a cheese ball and a cheese stick that has been deep-fried. You have a combination of cheese, a bit of binding, and tons of flavor that is melty and comforting.
We have made air-fried Babybel snacks and traditional deep-fried Babybel bites before with great success, but this makes it a step above. I love that it uses three different kinds of cheese for a complex flavor, but is still simple to prepare.
When the flavor of this cheese combines, watch out. The cheese balls will create the perfect bite. You’ll be the hit of the party when you show up with these cheesy delights. They’re sure to please even the pickiest of eaters. Be prepared for this to become one of your most asked for recipes.
Ingredients
- 1 pound cheddar cheese (450 g)
- ½ pound Parmesan cheese (225 g)
- ¾ cup cottage cheese (or Ricotta) (125 g)
- 1 ½ cups all-purpose flour (200 g)
- 5 large eggs
- 1 teaspoon salt
- 1 teaspoon black pepper
- ½ teaspoon Aleppo pepper powder
- Oil for frying

How to Make Homemade Cheese Boulders
Shred the cheddar and parmesan cheese then combine it in a large bowl and stir to mix well. You want each bite to have a little of every cheese, so make sure you stir this well.
Then, add in the cottage cheese or RIcotta cheese. Depending upon where you are located, cottage cheese may have curds, which is fine in this recipe.
Add in the flour, beaten eggs, salt, pepper, and Aleppo pepper. You can add garlic powder, Italian herbs, or use paprika in place of Aleppo if you prefer.
Stir this mixture together until totally combined then cover it loosely and refrigerate for one hour.
Prepare a deep pan or deep fryer with frying oil making sure there are at least 2"-3" in-depth to cover the cheese boulders completely in oil.
Once the oil is hot, begin scooping the balls into the oil.
Be careful to not overcrowd the pan.
Cook the Cheese Boulders for 2 to 3 minutes. Cook just until they are heated through and golden brown on the outside. If they begin to get too brown, make sure you aren't putting too many in the pan at a time and making it take longer to cook.
Drain on paper towels and let stand for 2 to 3 minutes at least before serving. This makes sure nobody burns their mouth on hot cheese!

I love when I can make a recipe ahead of time because then I can enjoy the party or get together with everyone else. You can make the cheese boulders ahead of time but you will need to reheat them when you are ready to serve them. These are not an appetizer that you want to serve cold.
Reheating can be done in an air fryer, oven, or even dropped back into hot oil for just a minute to heat through.
You can absolutely freeze these cheese boulders. Once you have made the cheese balls, you will want to let them cool completely before moving them to the freezer. When the cheese balls are cooled, you can place them on a plate in the freezer. Once frozen, which takes about an hour, move them cheese boulders to a freezer bag or plastic airtight container.
The cheese boulders will last for about 3 months in the freezer. When you are ready to serve use the frozen cheese boulders, you can bake or deep fry them from their frozen state.

Buckhead Cheese Boulders Deep Fried Appetizer

Ingredients
