Vegetable Bacon Frittata
This Vegetable Bacon Frittata is the perfect breakfast for anyone who loves bacon and eggs. It's a great alternative to traditional pancakes or waffles, and it includes vegetables like onions, peppers, and mushrooms. It can be served as an appetizer if you cut the frittata into small squares, served as breakfast, and it makes the perfect dinner! The best part of this recipe is that it can be made in advance so all your cooking is done at once!
The ingredients are simple but make for a delicious dish. This recipe takes less than 30 minutes to cook which makes it perfect for weekday mornings when time seems short.
If you like this frittata, then you may also want to try Fanny's burst tomato frittata with fontina and basil oil for a more upscale dish. Of course, we like this vegetarian option with the loaded vegetable frittata recipe as well.
What Cheese Can I Use in a Frittata?
I like to use a 3 cheese blend when I make a frittata with bacon. It balances nicely. You can, of course, use any number of cheeses that you prefer. Below are a few that work well with both eggs and bacon.
- Sharp or mild cheddar.
- Goat cheese
- Monterey Jack
- Queso Fresco
Experiment with different cheeses to find your favorite!
What Other Vegetables Can I Add
I am using onions, bell peppers, and mushrooms in my vegetable frittata. You can add whatever kind of vegetables that you like. Some more ideas are below for you to mix and match to make your frittata exactly how you prefer.
- Green beans
- Green chiles
If adding additional vegetables, keep the amount to a total of 1 cup of vegetables for the entire recipe for best results.
Can I Add Different Meats?
While bacon makes everyone better, there are plenty of other meat options that you can add to the recipe. You can add any kind of breakfast meat to this recipe.
Canadian bacon, ham, turkey bacon, Italian sausage, breakfast sausage, turkey sausage, or even chicken sausage are all excellent choices. Just make sure the sausages are cooked fully and excess grease has been drained first.
If you live in an area that has things like pork roll or scrapple, these breakfast meats can also be added. Another delicious option is to add veggie meats to this dish.
What Goes with a Bacon Frittata?
This is easy to pair together with a side dish. This bacon frittata will go great with fruit or this easy Instant Pot yogurt if you are looking for a simple side dish.
When I serve this as part of a brunch, I include tater tots or hashbrowns, some blueberry muffins, and sometimes banana bread on the side for a full buffet of sweet and savory options. And for those who drink alcohol, a mimosa is always a welcome drink.
- Red onion
- Red bell pepper
- Green bell pepper
- Olive oil
- Unsalted butter
- Heavy cream
- Black pepper
- Cooked bacon
- Shredded cheese (your choice)
TIP: Pre-cook the bacon in batches using this oven-baked bacon recipe then keep it on hand for recipes throughout the week.

How to Make a Vegetable Bacon Frittata
Preheat the oven to 350°F.
In an oven-safe skillet, heat olive oil over medium heat.
Add the onion, bell peppers, and mushrooms, then saute for 3 to 4 minutes until softened. Remove from heat and set aside.
In a large bowl, whisk together the eggs, cream, salt, black pepper, and oregano until combined.
Into the egg mixture, stir the bacon, cooked vegetables, and cheese until incorporated. If desired, reserve some of the cheese to add to the top for the last 5 minutes of the cooking time.
Pour back into the skillet used for the vegetables or into a prepared baking dish that has been sprayed with non-stick spray.
Bake, uncovered for 30 minutes until the top is golden and the eggs are set in the center.
Let stand for 5 to 10 minutes before serving.
Frittatas are prepared in a cast iron pan or oven-safe skillet because they begin on the stovetop and finish in the oven or are just baked. Frittatas, unlike omelets, can be made to feed one or many people, and they may also be eaten hot or at room temperature. Large frittatas are divided into pieces like a cake, whereas omelets are folded or rolled to eat like a burrito.
You can use milk instead of cream in this frittata. It does take away from the richness and creaminess of the frittata. Some people prefer to use milk instead of cream because it is lower in calories. Regardless of which you choose, it is going to taste delicious.
The best rule of thumb when making a frittata is to use ¼ cup of dairy for every 6 eggs. Any more liquid added will cause it to not set well. This is also why it is important to use fresh vegetables and cook them before adding to the egg mixture so all of the excess liquid has been removed.
If you are going to start this on the stove top and bake it to finish, an oven-safe skillet is a must. I recommend using either a cast-iron skillet or a Dutch oven. Both are excellent choices that can go from stovetop to oven easily.
